The Restaurant

Homemade through and through, with a wide menu of Asian and Western plates served under thatch and palms. A traditional Italian pizza oven turns out wood-fired pizza, and much of what reaches the table — herbs, vegetables, fruit — is grown a few steps away in our own gardens. Days drift easily between the open-air dining room and the coconut-shaded garden terrace, the pool just beyond.

Lunch into the afternoon

The Garden Terrace

Take a table on the terrace beneath a coconut tree, with the pool and gardens around you. It is the slow part of the day: a plate of crispy pork belly or pancit, garlic rice, a platter of fresh tropical fruit picked that morning, and time to do nothing much at all. Everything is cooked fresh to order, the way a holiday should feel.

Into the evening

The Pirate Bar

Stone-built, with a tree growing straight through it, the Pirate bar is where the evening settles. Tropical cocktails come garnished with flowers and fruit grown on the property — calamansi, mango, whatever ripened today — alongside cold beer and a layered iced drink or two. The last seat to empty most nights.

Breakfast

Cooked to order and included with every room: eggs the way you actually want them, bacon and toast, garlic fried rice, and fresh tropical fruit from the gardens. Take it in the open-air restaurant with the morning coming up around you, or carry it out to your terrace and eat it half-asleep, which is rather the point.
